Trained in Ballymaloe, then off to Naples to learn the true craft with the Associazione Verace Pizza Napoletana, right in the heart of it all. At Crust, the big red wood-fired oven steals the show in our brick-walled back room, fired up with real pride by Richard and the team. Dough is made fresh every day and rested for 48 hours for that light, airy, blistered Neapolitan base. Then we top it the Crust way: Irish artisan stars like Gubbeen Smokehouse Chorizo & Salami, Ardsallagh Goats Cheese, Cashel Blue, and Coolea Farmhouse Cheese — Italy in technique, Ireland in flavour.
