As the world begins to take more notice of the effects we’re having on our planet, the hospitality industry is increasingly playing its crucial part. More venues around the UK are beginning to adopt more sustainable approaches to the way they do things, from sourcing produce locally to adapting menus so that there are more plant-based options. Here are some of the leading restaurants around the UK who are leading the front in terms of sustainability.
The menu at No. 10 Bar & Restaurant has been inspired by classic brasserie cooking, with a focus on local, fresh and seasonal produce to create a traditional yet innovative menu, to provide you with an unforgettable dining experience. Situated in the heart of Aberdeen’s West End, the venue offers effortlessly stylish food, service and hospitality.
Thomas Restaurant is located in Future Inn Cardiff and serves British food with an array of honest, contemporary Welsh dishes. The team prides itself on providing the best, mouthwatering, fresh, local ingredients and binding them together to create the distinct, authentic flavours that makes dishes their dishes truly stand out. We’d recommend trying the Welsh Cawl, with lamb stew, Caerfai cheddar and crusty bread. Delicious.
Newcastle’s Horticulture is a forward-thinking restaurant that serves hearty, tasty social food, casual small plates, and delightful brunches, all of which combine a love for creativity but does so whilst being environmentally friendly, organic, and locally sourced. Expect modern British cuisine with international flavours delivered in a relaxed social environment. 90 per cent of the dishes are naturally gluten free, over half the dinner menu is vegetable based and almost all of the food is organic. A firm favourite.
Found tucked into the countryside of East Devon is Glebe House; a beautiful rural estate hosting a unique Gregorian house, now run as a guesthouse and restaurant for lucky visitors. While a stay at the gorgeous farmhouse is recommended, you can just pop in for a meal in their farm kitchen if you book ahead.
The structure is farm-to-table, with a heavy Italian influence from owner Hugo’s time spent in the Mediterranean. Exploring nose-to-tail cooking, you can expect to see dishes such as fresh jersey curds and treviso, smoked ox heart, Lyme Bay scallops, Tagliarini with monkfish ragu, and roast chicken. Of course, the menu follows the natural path of seasonal produce, but there are always plenty of options for vegetarians, vegans, and anyone with allergen requirements.
Found in Hay-On-Wye in Hereford, Chapters is all about sustainability, supporting small-scale producers and independent businesses, and delicious fare. The space is light and bright, with a welcoming warm aura. Spy trinkets, books, and plants along the windowsills, as well as the homely bar with wine bottles lining the walls. It’s a place where you’re sure to feel right at home.
The seasonal menu highlights produce from the local area of Hereford, often incorporating preserved summer produce in their winter menus, and dabbling in pureeing, pickling, fermenting, and salt-curing components of each dish. Expect to see the likes of Hay Charcuterie and Cheddar Croquettes with wild garlic mayo, Acorn and Treacle Loaf, Whipped Cods Roe, Chapters Pickled Veg and Moor Park Herbs, and plenty of free-range chicken options. A number of products used in their menu are available for takeaway when the restaurant is open, including their sustainably caught tinned fish market on Saturdays, and plenty of bottles of wine to pick up for your home cellar.
Just south of Bath, you’ll find Castle Farm in Midford, an oasis for countryside living and dining. Overlooking the Midford Valley, the restaurant sits in a refurbished barn with stunning panoramic views as the sun goes down. Utilising the extensive garden, the menu changes with the seasons and relies on foraging from Castle Farm’s own produce, as well as sourcing from local producers including local ciders and craft beers. Excess produce is used to create cordials, pickles, and preserves to cut down on waste at Castle Farm.
Each night of the week holds something different at Castle Farm’s restaurant. Friday evenings are all about curry, drawing on inspirations from Malaysian and South Indian cuisines. While Saturday is supper club, with a monthly menu boasting a new theme to create a degustation with a wine and cocktail pairing. Sunday roasts round off the week, served family-style with plenty of sides.
Inspired by their love of the surrounding area of the South Downs, Eastbourne, Craig and Erina opened Skylark in 2018. Supporting and promoting the produce of Sussex, Skylark works closely with local butchers, fishmongers, bakers, coffee roasters, and winemakers to run the British bistro. The venue is a breath of fresh air, with wooden finishes and light spaces, just minutes away from the Eastbourne waterfront.
Relying on seasonal produce, you’ll find the likes of Sussex gammon, Sussex pork sausages, free-range eggs, Poppyseed Bakery sourdough, local organic lamb burgers, Salt cod fishcakes, grass-fed beef from Bullock Down Farm, Arlington free-range chicken, wild mushrooms, and gin-cured Chalk Stream trout. The bistro is open for breakfast, lunch, and dinner, with a cracker Sunday roast served until 3pm.
