Elements in Glasgow’s Bearsden, opened their doors in July 2024, and already they’ve made waves in the hospitality scene with their focus on fresh, local produce and a strong commitment to sustainability. Offering a unique fine dining experience centred around its open kitchen and chef’s counter, you’ll enjoy a front row seat for dinner and a show where you can watch the chefs meticulously prepare some very elegant dishes.
Elements is led by renowned Head Chef Gary Townsend, with this being his very first solo adventure after an impressive culinary history including L’Enclume, Restaurant Sat Bains, and Glasgow’s award-winning One Devonshire Gardens. His aim was to create a relaxed and welcoming environment, serving up sustainable, fine-dining plates. His inspiration is eclectic, with global influences along the likes of Asian influences, Nordic, and classical French –all of which can be found in his unique style of cooking.
The actual restaurant itself strikes a balance between comfort and sophistication. Featuring minimalist design elements and warm, natural tones, the space invites guests to relax and enjoy their meal in a refined atmosphere. The chef’s counter, with its limited seating, offers an exclusive opportunity to interact directly with the chefs and witness the artistry behind each plate.
As mentioned, sustainability is at the core of Elements’ mission. The restaurant partners with local farms, fisheries, and suppliers who share their commitment to responsible sourcing and waste reduction. By prioritising seasonal ingredients, they aim to minimise their environmental impact while maintaining high standards in their dishes. Elements stresses they take these measures, not because it’s the right thing to do, but because it’s the only thing to do.
Their sustainability measures carry all the way through, from smart lighting solutions and heating systems being added in during refurbishments to water-saving initiatives in the bathrooms and kitchen appliances. Their electricity is sourced from renewable energy and their gas is from a 100% carbon- neutral supply. The restaurant also prides themselves on using cleaning products derived from renewable resources, meaning there are no toxins going into water systems and the environment.
The menu at Elements is dynamic, constantly evolving to showcase seasonal ingredients at their peak. With an emphasis on contemporary Scottish cuisine influenced by global traditions, the restaurant offers a range of innovative dishes that highlight the best of local sourcing. They also offer the opportunity to be taken through a traditional set menu, or the option to go a la carte, as well as a seperate entirely plant-based menu too.
Current standout ingredients include Scottish West Coast langoustines, a Scottish wild halibut & nori mosaic, Tweed Valley beef short rib, Isle of Wight heirloom tomatoes, North Sea cod loin, St Brides duck, Wild Wood pigeon breast, and Scottish lamb rump & belly.
To drink, a wine pairing never goes amiss, but if you’re after something a little lighter, Elements cocktail menu is immensely unique and exciting. Some of our favourites include their Vanity Project with vodka, maraschino, crème de violette, absinthe, and lemon served in a bird flute, as well as their West Coast Sunset with Olmeca Altos Plata Tequila, grapefruit, blood orange, and Aperol, inspired by the sunsets of Arisaig on the west coast of Scotland. Whatever you’re feeling, Elements has a tipple for every taste.
